In the days leading up to harvest, the tea plants are partially shaded, a traditional Japanese practice known as kabuse. By reducing sunlight exposure, the plants produce higher levels of chlorophyll and L-theanine, the amino acid responsible for the tea’s savory umami flavor. This shading also suppresses the development of catechins, resulting in a smoother, less bitter profile.

The tea is lightly steamed “Asamushi” immediately after harvest, a process that locks in freshness while preserving the leaf’s structure and delicate aroma. This short steaming method yields a vivid, clear bright jade green liquor color and a viscous, silky mouthfeel that reflects the tea’s premium quality.
