From the secluded, mist covered hills of southern Fujian, we bring you a rare gem among Chinese oolongs: Ba Xian Dan Cong, called also Eight Immortals Oolong, hand-crafted by Tea Master Mr. Luo at 800 meters of altitude in a remote, biodiverse mountain region. Harvested in spring this tea stands out for its rarity, complexity, and deeply evocative aroma.
Although Dan Cong oolongs are traditionally associated with the neighboring Guangdong province, Ba Xian has taken root in Fujian’s southern terrain where the shared topography and ideal microclimate allow this exceptional cultivar to flourish. Little known even within China, this tea is a true hidden treasure, cultivated in a wild, water-rich environment teeming with native flora and fauna.
Ba Xian Dan Cong is a whole-leaf oolong, carefully crafted through a traditional multi-day processing method. The leaves undergo an oxidation process of approximately 55%, a key factor in developing the tea’s rich and evolving aroma. From harvest to final drying, the tea passes through a meticulous series of stages-wilting, tossing, oxidation, fixation, rolling, and drying-over four to five days. It is then rested for several months to allow its character to deepen and mature.
Among the diverse family of Dan Cong oolongs such as Feng Huang and the intriguingly named Duck Shit Dan Cong-Ba Xian distinguishes itself through its refined floral and mineral notes. Its aromatic complexity unfolds in layers: fresh orchid blossom, sweet honey, toasty bread crust, and subtle hints of walnut and spice. The infusion color is both elegant and structured, offering a lingering mouthfeel that invites mindful contemplation.
This tea is as intellectually engaging as it is sensorially rewarding a fine balance of delicacy and depth, sweetness and minerality.
Brewing Recommendations:
- Warm your teapot or gaiwan by rinsing it with hot water, then discard the water.
- Rinse the leaves adding the tea leaves to your preheated vessel.
- Pour a small amount of hot water over the leaves, just enough to cover them.
- Immediately pour off this rinse water. This step washes the leaves and helps them start to open up.
Gong Fu Cha Traditional Infusion Chinese Method:
- Water temperature: 90-95°C
- Tea quantity: 2-4 grams for 100-200 ml of water
- Steeping time: 20-40 seconds
- For the second and following infusions, add hot water and increase the steeping time by about 10-30 seconds each time.
- Suitable for up to 8 infusions, each revealing new layers of aroma and taste
Western Style Infusion Method:
- Water temperature: 90-95°C
- Tea quantity: 2-4 grams for 200 ml of water
- Steeping time: 2-3 minutes
- Suitable for 2-3 infusions
